I'm back. Sorry for my hiatus. Luckily I have a very sweet unemployed husband that can pick up the slack when I'm feeling a bit overwhelmed. The funny thing is that I made the last two recipes on time but just couldn't find the energy to post them.
So hopefully I'm now back on schedule. I made these thumbprints on Sunday morning. I didn't want to buy hazelnuts so I used some ground almond meal that was leftover from some other recipe. The cookie dough is primarily butter and flour/almond meal. Not too much else in there except for some sugar and vanilla and almond extract.
I was a total genius in the kitchen cooking these cookies. I rolled the cookie dough into the balls and put them on the baking sheets. I was running out of room on my kitchen counter so I balanced one sheet on the small piece of counter in front of the sink. I poked holes in the first cookies on the first sheet and then moved over to the second sheet precariously perched on the counter. Not thinking I began to poke holes in the cookies and all of a sudden the sheet tipped (not very surprising) and all but 2 of my 15 cookies fell onto the floor. I made some sort of weird noise which woke up the unemployed husband napping on the couch, freaked out the cat and scared the dog. Pete came into the kitchen I must have looked really pathetic standing there with a cookie sheet in my hand and cookie dough balls all over the floor. I kind of just whimpered and Pete started picking up cookies and said "a little grit won't hurt." See. Sweetest husband ever. We baked up the cookies grit and all and have been enjoying them.
I wouldn't say these were a huge hit but the number continues to dwindle. I really like them and Pete is happy with anything with sugar in it since he gave up all sweets but what I make for Lent. He can't be too picky or no sweets for him.

Lucky you to have a hubby that really gets into all you do! WOW! he even posted here sometimes... Go Pete, Go! Pfff... I have trouble getting mine to leave a comment on my blog. But in the end, I can't complain... cause he sometimes does all I dream of, without even asking! AH! Men... go figure.
I'm glad you guys wenjoyed those, although I'm sure we did more! LOL
5 second rule! Right? Pete's reaction was great, and I loved reading about it, though I'm sorry it happened. I do the balancing the cookie sheet in front of the sink act more than I should, and I'm familiar with that sort of accident.

It's not the grit I'd be concerned with at your place, it'd be the pet hair! jk ;)

ReplyDeleteGo Pete! What a bummer about dropping the cookies, but those kinds of things happen to all of us (or at least they happen to me). I always figure if I'm baking it, I'll kill any germs!
ReplyDeleteEveryone knows that the 5 (or 10, or 15) second rule totally applies in these situations, especially when cookies are involved! Your husband does sound super-sweet, and totally deserving of some cookies for his hard work. :)
