msc: lemon cupcakes

This month for Martha Stewart's Cupcakes Club Megan of My Baking Adventures chose lemon meringue cupcakes. I adore lemon. Lemon cake, lemon candy, lemonade, lemon bars, I love them all. So when I saw that we were making lemon cupcakes I thought YUMMY.

This recipe had three steps, cupcakes, lemon curd and a meringue frosting. This was two steps too many for me. I improvised. Don't be mad. Please don't kick me out. I did make the actual cupcake. I bought some lemon curd at Trader Joe's and I can't believe I'm going to admit this but I bought vanilla frosting. My cupcakes weren't really lemon meringue. Just lemon with some vanilla frosting.

I cut little cones out of the top of the cupcakes and filled them with some lemon curd and then put the little cone back in and frosted the cupcakes. The cupcakes are tasty. A nice lemon flavor. The Trader Joe's lemon curd is very tasty and the frosting was good too. This was a nice simplified version of Martha's recipe. I made a half recipe which still made 12 cupcakes which is probably six too many for Pete and me. I have a bit of a tummy ache but the cupcakes are worth it.   1. I cheated too and ended up making it as a cake! What matters is you took Martha's recipe as inspiration and changed it to fit your needs. I'll bet these were delicious and easy to make!

  4. oh don't be daft! i think a good handful of us either made shortcuts on these, bought curd/frosting, or just left the topping off altogether. Dont you worry one bit! You participated, you ate, you enjoyed. and in my book, the last two are the most important. hehehe yumm!! they look great!

  6. You are very smart to get TJ's lemon curd. I spent over an hour and half on the two batches I had to make. Yours are so pretty and delightful!

  10. I hear so many people talking about Trader Joe's and how awesome it is...must be a regional store! :)

    Its okay that you changed the recipe. I wish that I would have made plain 'ol vanilla frosting for these, I would have enjoyed them more. Congratulations on your pregnancy!

  12. I've learned so much this week with so many of the bakers talking about TJ's lemon curd - I didn't know about it but I'm going to search it out! Homemade is good, but not always feasible. Your cupcakes look wonderful!
