msc: gingerbread cupcakes

I whipped up these cupcakes on Sunday after a very long weekend of baking cookies, cookies and more cookies. Pete had to go to the recording studio again and I thought that sending the cupcakes with him would be the perfect way to get them out of the house. I only made a half batch which produced ten regular size cupcakes. The perfect number, enough to give the band a couple each.

As I previously posted I've lost my sweet tooth the past couple of months and it takes a lot to tempt me to try something I baked. I'm hoping I get over this because I really like sweets and what fun is there in making sweets if you can't gobble them up and waddle around the house after with your pants unbuttoned.

These cupcakes are super simple to make. They have the usual spice combo of ginger, cinnamon, nutmeg and cloves (if my memory is correct). These were significantly easier to make because I didn't have to make any frosting. We went over to Erin's house on Friday night and she gave me a container of cream cheese frosting that was in her freezer. All I had to do was make the cupcakes and pipe on some frosting. Easy enough.

One of the cookies I made this weekend were the sugar topped molasses cookies and I made a few small versions to decorate the top of these cupcakes with. I think they turned out cute. Pete said they looked professional. He probably just said that so he could have more cookies. He's a tricky one.

I cut one cupcake in half to try to take a picture of the center and I left that out for Pete to taste test before he took off for the studio. He ate one half and with a full mouth started telling me how delicious they were, best ever, fantastic, etc. He asked if I wanted to try a little bite and while I was thinking about it he put the whole second half in his mouth. I stared at him and said I would have liked a little bite and he proceeded to pull the half out of his mouth. I passed. I'll take his word for it. These were a hit. The band loved them.

  3. Your cupcakes look amazing. I love those cookies, actually more than I liked these cupcakes. I was thinking they would be good with cream cheese frosting, so I am glad someone tried it and that it worked well.

  4. Yours look awesome. I love molasses cookies and that was a good idea to top them as such.

    I wasn't a fan of this recipe, thought they were too dense and heavy, tops and sides were too tough, etc. Some will agree with me, some will not. Interesting results.

  8. I fully agree, it's not as fun to bake if you don't partake in enjoying the finished product. I hope your sweet tooth comes back soon! In the meantime, your cupcakes look lovely, and I'm glad they found a good home! :)

  11. Pretty cupcakes! I love the way the frosting looks like a little mound of snow on top just about to topple over the edge. Glad Pete enjoyed them :)

  15. I wish I would have thought to top these with the sugar-topped molasses cookies! I made some the same week and I bet they tasted so good together!

  16. Oh man, YUM. Those look awesome (definitely professional) I wish I lived closer because I'd be giving Pete a run for his money as official taste tester. I can sample me some sweets, especially in the winter when I have all these extra layers of clothes to hide my indulgence! :) Cant wait to see you!
