
I finally made them and I'm so glad I did. These were really really good. The cupcake has just the right amount of coconut flavor. Despite my lack of a sweet-tooth I've eaten three of these. That's a lot for me. I'm actually thinking of having another for dessert. I only made a half recipe because it is just Pete and I. I'm thinking I shouldn't of halved it.
These were so good I begged Pete to make me an animated picture and he did. He's the best. You can find the recipe in the Martha Stewart's Cupcake book on page 29. You should definitely make these.
