
Despite the name which I find difficult to pronounce and to remember this recipe was a winner. I also don't enjoy typing dacquoise, for some reason my fingers become all dyslexic, so I have renamed this the Yummy. The Yummy made the top 5 of the TWD recipes so far and it might even be number one. When I read the recipe I was a bit unsure of whether I would like it or not but really how can you go wrong with meringue, white chocolate ganache, roasted pineapple and coconut. You really can't, unless you hate any of the above and if that is the case, I'm sorry, your loss. My only complaint with this recipe was all the steps and the numerous hours of chilling. Luckily I read the recipe a couple of times before I started to bake otherwise I would be huddled on the floor of my kitchen rocking back and forth mumbling "too much chilling, don't have time for chilling." Which is completely possible considering my mental state of late.

This was a two day baking extravaganza. I made by meringues on Saturday and I made the beginnings of the white chocolate ganache on Saturday night before I went to bed. That way it had plenty of time to chill. I woke up early Sunday morning to roast the pineapple and assemble this bad boy. I must say that after last week's curdled custard incident I was WAY MORE ATTENTIVE (I was so attentive it deserves capitalization) this week and made sure that I didn't curdle my white chocolate ganache. It also helped that I used the hand mixer which made it impossible for me to walk away and forget it. It is also very difficult to hand mix, hold the bowl and read a book, so the ganache had my full attention. It turned out perfect. I love the white chocolate ganache. I want to write it love poems and marry it and have little white chocolate ganache babies or not because I would probably eat them. My pineapple roasted up fine and I might have over-toasted my coconut but it didn't taste burnt so I figured no harm done. I assembled my Yummy and tried my best to coat the sides but my meringue edges were far from straight so it was more of a puddling of ganache on the serving plate. Did anyone else have a ton of ganache left over? I've been dipping strawberries in it, grabbing spoonfuls, putting it on brownies, etc. Here's a shot of the Yummy cold chillin' in the fridge.

I decided I would serve the Yummy at a Father's Day lunch with my dad and my brother, Derek. Nothing like serving a dessert for 12 to 3 people. At least I didn't have to worry about running out.

My dad LOVED this dessert. I'm so glad that he did since it was Father's Day and it was his gift. He went back for seconds and thirds, not to mention his repeated tastes of extra ganache.

My pretty big brother, Derek, also liked it. He said it was the best recipe I've made so far. He and his gorgeous wife are often the recipients of my extra desserts, so he speaks with authority on the subject.

As I said before, my darling dad thought this recipe was to die for. Good thing Derek was there with his awesome Heimlich skills to save him. What? Aren't you supposed to squeeze the person around the rib cage to get them to stop choking? Such comedians these two. I'm just glad I got to spend some time with them and they ate the Yummy. This would have been a lot for me to eat all by myself. Pete was out of town this weekend so no good shots of him eating.

After all that baking Willa and I were exhausted. This is how the little one spent her lazy Sunday. Tough life.

Love your photos. They really capture the playful joy of the dessert. I just saw a blog where someone used the ganache to fill cupcakes. You could try that with the leftovers.
