There is nothing quite like a hot cup of tea and some yummy cookies to end a long day. These cookies were the perfect accompaniment to my favorite nighttime tea, Evening in Missoula, made by a cute little place in Missoula, Montana, called Butterfly Herbs.
Jayne of The Barefoot Kitchen Witch picked this week's Tuesdays with Dorie recipe. I made the batter on Sunday night after a long day of unpacking, laundry, gardening and grocery shopping. Being tired, I decided to make the batter on Sunday and refrigerate it until after work on Monday.
The recipe is an intriguing mix of lime zest, sweetened coconut, macadamia nuts, ground coriander, and (of course) lots of butter. When I first read the recipe I thought these cookies would just be "okay" but once they came out of the oven I was surprised by just how delicious they were.
The recipe recommends placing the batter in a gallon size ziploc bag and rolling the dough to fit the bag dimensions. I had a little trouble getting the batter even and when I tried to lift the plastic away from the batter to prevent creases it stuck to the bag and left some dents. For the most part the plastic bag worked great and it was easy to store in the fridge until I was ready to bake. I used a ruler and a pizza cutter to slice the cookies into squares. But despite my best intentions my lines were still on the crooked side.
My cookies came out a bit browner than I think the recipe intended even though I baked them for less than 15 minutes. My cookies also did not spread as much I thought they would. Despite my issues, the cookies were a hit. My dad thought they were so good that he ordered his own copy of Baking: From My Home to Yours.
